I don't know if they're the "best" but 2 of my faves that come right to mind are In Flames "The Hive" and Soilwork "Bulletbeast"

The acoustic solo in the Bruce Dickinson song Arc of Space, played by Roy Z, is one of my all time favorites. Other good solos are..

Taking the Queen (Bruce Dickinson/ Roy Z again)
Painkiller, A Touch of Evil, Beyond the Realms of Death (Judas Priest/ Glenn Tipton)

You can probably see here what kind of solos I like: melodic, emotional ones that build to a climax. Painkiller, of course, not being all that melodic... And when I play the guitar and I'm doing a cover version, I usually go for a fast shredding solo or a boring bluesy bends thingy instead of memorising the original version. My solos aren't that fun to listen to, but they sure are fun to play!
